Dorm-dash: Tuna, tomatoes and baked, stuffed potatoes
Have you been eating Ramen and only Ramen since classes started back? Mix it up with these easy recipes that you can make in your dorm room. Happy snacking!
Tuna Tomato Salad
Ingredients:
1-pint cherry or grape tomatoes (halved or quartered is fine)
Fresh cilantro (to taste) (parsley or celery tops if cilantro isn’t your thing)
¼ cup red onion (diced)
Olive oil (to taste)
Lemon or lime juice (to taste) (or salad dressing)
Salt, pepper, and chili flake to taste
1 can of tuna
Avocado (to top)
Directions:
Combine chopped tomatoes, cilantro, onion and tuna in a bowl
Add in olive oil, salt, pepper and chili flake and citrus juice or dressing of choice
Stir to combine
Set aside
Slice avocado and serve on top of individual salad portions
Loaded “Baked” Potatoes
Ingredients:
1 large russet potato
1 spring onion, finely chopped
Bacon bits (or imitation bacon pieces)
Cheese
Sour cream
Butter
Salt and pepper
Optional: broccoli, corn, salsa, whatever you have leftover from the week
Directions:
Puncture the potato with a fork or knife a few times on all sides
Microwave for 5 minutes or use 1-2 cycles of your microwave’s potato setting
If the potato is still not done, microwave in 30-second increments until cooked
Top as desired, potatoes are freestyle
