Dorm Dash: Veggie Broth

Unsatisfied with store-bought veggie broths, I decided to try making my own. I was surprised by how easy broth-making proved to be and could not stop sipping the final result. Turn your veggie scraps into delicious broth for yummy soups or a cozy beverage.

Ingredients:

  • Frozen veggie scraps

  • Water

  • 1 tablespoon olive oil

  • Soy sauce (optional)

  • Brown sugar (optional)

  • Vinegar (optional)

Directions:

  • Add frozen veggie scraps to a large pot.

  • Fill the pot with water and place it on the stove.

  • Add olive oil (If making a large batch, add a bit extra).

  • Bring the pot to a simmer, then simmer while covered for one hour.

  • After 30 minutes, add soy sauce, brown sugar, and vinegar to taste if using. (The amount of each will vary wildly depending on the amount and type of vegetables included, as well as the amount of water you use, so just add gradually).

  • Once the vegetables have simmered for an hour, strain the broth through a fine mesh strainer to remove the vegetable matter.

  • Enjoy broth as is or use it in recipes such as ramen!
