Dorm Dash: Fancy grilled cheese sandwich
Whenever I’m blessed to be around a charcuterie board I always beeline for the brie and fruit. One day when I was playing around in the kitchen, I decided to make a grilled cheese inspired by it, and this recipe has been my go-to grilled cheese recipe ever since. I feel like it’s a fancier version of the beloved classic sandwich.
Ingredients:
As much brie cheese as your heart desires
2 slices sourdough bread
1 ½ tablespoon of your favorite jam (blueberry or fig are my personal favorites for this recipe)
2 tablespoons mayonnaise
Optional: 3 slices of prosciutto and/or a handful of arugula
Directions:
Spread jam evenly on sourdough bread.
Layer brie cheese over jam. Optional: Layer the prosciutto and/or arugula on top of the brie.
Top with the other slice of sourdough to make a sandwich.
Spread 1 tablespoon of mayonnaise on each piece of bread on the outside of the sandwich. This is going to make the bread super crispy on the outside and is a really nice texture contrast to the soft brie.
Sear sandwich in a pan that has been preheated to medium heat. There is no need to put oil in the pan because the mayonnaise will keep your sandwich from sticking and crisp up the bread instead. You are going to want to flip the sandwich to cook both sides. I also like to press my sandwich down with my spatula to make the sandwich thin and crispy.
When both sides of your bread are golden brown and your cheese has gotten melty, your sandwich is ready!
Let your sandwich cool for a minute or two before digging into this sweet and savory meal that you’ll want to make again and again. It tastes indulgent and feels fancy, but is so quick and easy to make.
